> 250 g of dried chickpeas
> 2 cloves of garlic
> 6 tbsp of olive oil
> juice from a little bit more than a half of a lemon
> 3 tbsp of tahini paste
> 2 tsp of salt
> chill
> pepper
> coriander
> sweet paprika
Preparation:
(you can skip this part if you bought caned chickpeas)
First you will need to drain dried chickpeas in a cold water and leave it to sit there over night. After most of the water is absorbed you may begin cooking - this process will take about 1,5 h. You should cook chickpeas till it is possible to easy smash it. I cooked mine in a rice cooker, but if you don’t have one you can easily cook it in a pot.
Return here if you skipped the cooking process->
When the chickpeas is ready you should place it in the food processor together with olive oil, lemon juice, salt, pepper, paprika, chilli, coriander, garlic (remember to always squeeze garlic with a knife before you use it, as it makes it more juicy) and tahini.
Mix it until smooth, add water or olive oil as need.
You hummus is ready, you can eat it with tortilla chips or nachos.
As for healthier version I consume it with celery sticks ;)
Bon appetite!
